Easy Chocolate Peppermint Gluten Free Brownies

All this talk of Christmas had me on a craving for one of the most popular tastes of the year... peppermint. And, who can resist the easy pairing of chocolate with this flavor. So, I came up with an idea to use a Betty Crocker Gluten Free Brownie Mix on hand to create a fast, yummy treat. I hope you like it too!
Ingredients:
1 Betty Crocker Gluten Free Brownie Mix (plus ingredients on the box to prepare mix as directed)
1 1/2 cups Powdered Sugar
5 Tbsp Butter or Margarine
2-3 Tbsp Almond Milk or Soy Milk
1 tsp Peppermint Extract
2-3 drops Green Food Coloring, if desired
2 ounces Unsweetened Chocolate

Directions:
Prepare the brownie mix as directed and bake batter in an 8x8 pan. Let brownies cool completely. Once they are cooled, in a separate mixing bowl beat powdered sugar and 3 Tbsp of butter until creamy. Add to that mixture enough milk that the frosting is spreadable. Stir in the extract and food coloring. Spread the mint frosting over the brownies and then chill in the refrigerator for about 15 minutes. Once brownies are completely chilled, melt chocolate and the remaining 2 Tbsp of butter in the microwave on high for one minute. Stir mixture and heat in microwave for 10 second increments until mixture is smooth. Pour chocolate over frosted brownies. Chill in the refrigerator again for 1 hour for chocolate mixture to set. Cut into squares with a hot, sharp knife to serve. Store remaining bars in refrigerator.
