Gluten Free Danish Pastry

Nothing like fresh baked goods on a weekend morning. This morning I indulged in a pastry.


Doesn't that look scrumptious? Here is the recipe to make your own.
 
Gluten Free Raspberry Danish Pastry
 
2 Tbsp Butter
1/4 cup Honey
1 Egg
1/2 cup Sour Cream
1 Tbsp Yeast
1/4 cup Potato Starch
3/4 cup Cornstarch
1/4 tsp. Baking Soda
1 tsp. Baking Powder
1/2 tsp. Salt
1 tsp. Xanthan Gum (or Guar Gum)
1/2 tsp. Cider Vinegar
6 Tbsp. Raspberry Jam
1/4 cup Powdered Sugar
1 tsp. Water

Directions:
Preheat oven to 350 degrees. In a mixing bowl, combine butter, honey, egg, and sour cream. Stir in yeast. In a separate mixing bowl, combine the starches, soda, powder, salt, and gum. Slowly incorporate the dry ingredients to the wet ingredients to minimize the formation of lumps. Beat with an electric mixture until batter is smooth. Stir in vinegar. Scoop out about a 1/4 cup of batter and place on a greased cookie sheet. Spray your hands with cooking oil and pat the lumps of batter into a smooth circle. Press your thumb in the center to create a place for your jam. Place approximately one tablespoon of jam in center of pastry. Bake for 15 minutes. While baking, whisk together the sugar and water. Drizzle the icing over the pastries when they have cooled. Yields 6.
